I keep doing this. I fall off the face of the planet and then I come back apologizing for being gone for so long. But here’s the deal: My life; my kids, husband, and commitments surrounding them are what comes first. It’s not that I don’t love sharing my recipes and writing for Mommy Bistro. It’s that I was busy playing an epic game of hide-n-go-seek or teaching our daughters how to tie their shoes. It’s that I’ve been busy volunteering for their two schools or taking them to gymnastics and art class.

We are deep in throes of Summer people. I’ve survived two camping trips, a wedding, two weeks of swim class, gymnastics camp, play dates, swim dates, having the neighborhood children over, beautiful weather, great food, great friends and NO ALARM CLOCK.
Kate’s Crispy Egg Salad
I’ve been busy all day playing hide and seek with the girls and enjoying my little spidergirl. One of my best girlfriends lives in Chicago and works for McDonald’s corporate. When she heard how much my little Buggies loves Spiderman, she sent a HUGE box stuffed with all things Spidey. I mean really; coloring, t-shirts, nail polish, a slip and slide, backpack, sunglasses, the list goes on. Which put Buggies into Spidey-Heaven. She immediately changed out of her adorable tutu dress and into some brown pants and her spidey shirt. And then grabbed her sunglasses and backpack and told me she was off to gymnastics camp.
Mommy Bistro Kids: Baked “Fried” Lemon Chicken with Honey Mustard Dipping Sauce
I had a horribly epiphany over the weekend. I realized that in about three years time, my girls will be off to school all day long. Which means they are growing up tooooooo fast for me. I want them to stay little and cuddle with me and still need their mommy. I know it sounds crazy, right? Three years is a long time away! But then I think about Pixie turning FIVE this year and it makes me realize that time is literally moving in fast forward for me. And school is really long. They will be in school for the next 18 years of their lives! I know we all did it but I’m just having a hard time letting my girls get so big. I’m sure our parents felt this way too. But they’re my BABIES!!
Sigh…
The Great Caperless Piccata
I love salt. So, why don’t I like capers? I have no idea. But I love a lemon, wine, garlic sauce so I still do love the Piccata. I’ll tell you what – if YOU want to add capers, be my guest. But this recipe will be without those salty little morsels.
Hubby’s Note: I want to bathe in a lemon/wine/garlic/butter sauce. Seriously. Add onions or shallots in to the mix, and I honestly don’t think there’s any better combination of flavors. I’ve suggested to my wife that there are many uses for such a sauce. She keeps telling me that those uses are best kept to the kitchen. I’ll leave that fight for another day, because YES, this dish rocks. Fry the chicken a little bit and add this sauce, and it’s GAME ON! Well, at the dinner table anyway.
Open Face B.L.T.A. with a Fried Egg
My parents have chickens. So every week my mom swings by with twenty-four beautiful organic eggs. That’s a lot of eggs. So, I had to get creative on what to do with so many eggs. You can only make so many cakes and cookies before your too big to fit through the door. This sandwich gives you that breakfast for dinner feeling. It’s comforting and ridiculously yummy. Go home tonight and make. this. sandwich.
