Lazy Sunday Omelets
There is nothing lazy about these actual omelets. It’s the Sunday that is lazy. The hubby and I live for our Sunday mornings. Buggies and Pixie come tumbling in sometime around 8:30 AM and they cuddle with us in bed for about a half an hour. Afterwards we plop onto the couch and watch a couple of their favorite shows; Sophia the First, Jake and the Neverland Pirates, and Doc McStuffins. About halfway through the second show I disappear into the kitchen to start on breakfast. The girls are all over the map when it comes to what they want for breakfast…and what I’m willing to make (do I look like a short order cook?). Pretty much every day, Buggies asks me to make pancakes, and Pixie goes along w/ that. The hubby and I however, prefer a delicious savory omelet.
HUBBY’S NOTE: I highly recommend getting some Chile Oil and drizzling it on top of these things. Ridiculous good!
Salmon Stack
In 2005, we sold our condo in Sherman Oaks and moved back in with my parents. We really didn’t want to do a contingency and so my parents took us back in while we looked for a new house. Can I tell you how awkward it is to move back into your old bedroom with your HUSBAND? I still had my glow in the dark stars on the ceiling from when I was 15. No joke.
Mommy Bistro Kids: Pizza Roll-Ups
My new goal is to release one kid friendly recipe per week. I am sure I am not the only mommy out there who is frustrated on a daily basis with the near impossible task of getting her darling little kiddos to eat their dinner. When Buggies and Pixie were babies, they ate everything I put in front of them. As they have gotten older (and more independent), I feel like I’m losing the food battle. I insist on vegetables with their meals (fruits are easy peasy to get these little monkeys to eat). Even if it is just one bite, it’s a step in the right direction. On the other hand, I’ve never met a 45 year old man or woman who only eats mac n cheese. Which makes me feel like there is a ray of sunlight at the end of the tunnel.
Hubby’s Note: When it comes to our kids, my wife is the Food Whisperer. If I am left in charge of dinner for them, it’s gonna be Mac N Cheese, or eggs, or snacks. Or Del Taco. I’m not ashamed of this, I’m just a realist. I know my limitations.
Spinach Salad with Balsamic Onion Dressing
Salads are a pretty standard fallback meal in our house. They are healthy, delicious and easy to make. Most evenings we don’t sit down to eat our dinner until after Buggies and Pixie are fast asleep. And some days don’t go as smoothly as others. Which brings me to make an easy salad for dinner. Spinach is such a wonderful source of vitamins and is one of the healthiest leaves you can put in your body. Granted topping it off with bacon may not be the best thing for your body but my motto is, “everything in moderation.” In this picture you can see croutons which I don’t normally use. But they were calling my name in Trader Joe’s…
Hubby’s note: And my motto is, “WHERE’S THE BACON”?! Bacon + Avocado = Happy Hubby. Wait, did you say this was healthy?
Southeast Asian Salad
There is seriously no reason other than my own love for Southeast Asia that this salad has its name. For our honeymoon, we went to Bali, Bangkok, and Koh Samui. Before I met my husband I spent a month with my dad in Vietnam and Singapore. I am completely in love with that part of the world. Two things I have on my bucket list are to go to Australia and back to Bali. The culture, the kindness of the people and the pure calm and peacefulness is enthralling. So this salad reminds me of Asia and it is so ridiculously good, you will eat the whole bowl. So make sure you’re under adult supervision and share so that others can enjoy it with you. A HUGE shout out to my Molly for turning me onto this salad during our recent Mommies & Babies gone wild trip to Catalina. I know, we’re a wild bunch people! 3 moms, 1 auntie, 1 grandma and EIGHT KIDS for a week in Catalina. Every year. 😉
Hubby’s note: The idea for this recipe was not the only thing we brought back from Southeast Asia. A prescription helped the second thing go away though.
Beef and Spinach Lasagna
I have always shied away from making lasagna. It just seems like a time consuming, awful mess. That was until my brilliant mother in law parted the clouds and showed me the way…to the noodles you don’t have to boil and lay on foil and get frustrated with because they stick or rip. Thus I give you, easy as pie lasagna.
