Dutch Babies
Back in 2003 my good friend Kelli got married just a few short weeks before we did. We spent the week before her wedding with her family in Burlingame, CA. One morning, we came down to the most delicious smell.
Coffee, something sweet, and of course mimosas. Kelli’s mom was whipping (literally) up a batch of Dutch Babies. These little suckers are easy to make and soooo delicious. We love popping them in the oven over the weekend for a special breakfast. And every time I make them; they remind me of Kelli and her family!
Ingredients3 tablespoons butter
3 large eggs
3/4 cup milk
1/2 teaspoon vanilla
1/2 cup all-purpose flour
2 tablespoons sugar
1/8 teaspoon salt
Directions
Place a 10-inch ovenproof frying pan in the oven and heat to 425. In a blender or using an immersion blender, beat eggs until light and pale. Blend in milk, vanilla, flour, sugar, and salt. Once the oven reaches 425, add 3 tablespoons butter to pan and close oven. After about a minute, whip the pan out, pour in the batter and bake for 15-20 minutes until pancake is puffed and lightly browned. Sprinkle with powdered sugar and serve immediately.
